IPAeus IV

IPAeus IV – a special edition “Wedding IPA”.

Brewed January 6, 2020. Bottled January 22, 2020.

5.8% ABV (OG 1.064 / FG 1.020)

Recipe:

3 kilo Pilsner extract
1.5 kilo Pale Ale extract
500g Torrified Wheat
250g Caramel Light 10 malt
250g Victory malt
45 grams Cascade hops (bittering)
70 grams Cascade hops (aroma)
11 grams Safale US-05 ale yeast
200 grams cane sugar

Brew Notes:
Equipment cleaned with bleach solution and sanitised with Iodophor solution. An approximate 10-15L filtered water heated up for the mash, with the steeping grain bag added at 68°C for 45 minutes. Heat dropped down to 52°C and brought back up to 68°C throughout the process. Wort removed and the mash sparged with tons of filtered water until approx 28L wort was put up to slow boil. 45g Cascade hops added 25 minutes after boilpoint for 20 minutes, factoring time conversion for the use of the no-chill method. At flameout 70g of Cascade hops were added to the pot in a whirlpool. The approx 24L of wort was then decanted into the fermentation bucket directly, with extra filtered water added until volume reached 25L with a sealed airlock to prevent air contamination during cooling. Bucket was placed in refridgerator to cool more rapidly, and removed for the fermentation. The following day Safale US-05 yeast packet was added to the brew with OG 1.064 at 17°C. Temp fluctuating from 13-16°C throughout the fermentation. Checked 10 days into brew: SG 1.020. Checked 15 days into brew: FG 1.020 = 5.78% ABV. Bottled that day into Iodophor solution-sanitised 330ml bottles primed with 200 grams white cane sugar.

Yield: 19.47L (59 x 330ml bottles)

IPAeus III

IPAeus III – an American “West Coast” IPA.

Brewed December 24, 2018. Bottled January 14, 2019.

6.3% ABV  (OG 1.067 / FG 1.019)

Recipe:

  • 6 kilo Pale Ale malt
  • 500 grams CaraPils
  • 500 grams Flaked Barley
  • 30 grams Columbus hops
  • 30 grams Cascade hops
  • 30 grams Chinook hops
  • 11 grams Safale US-05 ale yeast
  • 185 grams demerara sugar

Brew Notes:
Equipment cleaned with bleach solution and sanitised with Iodophor solution. 23L filtered water heated up for the mash, with the grain bag added at 67°C for 60 minutes. Heat fluctuating just a few degrees throughout the process. Wort drained to about 21L, mash sparged with filtered tap water until approx 26L wort was put up to boil. Columbus hops and 15g of the Cascade hops added 35 minutes after boilpoint for 25 minutes, factoring time conversion for the use of the no-chill method. At flameout the remaining 15g of Cascade and Chinook hops were added to the pot. The approx 24L of wort was then decanted into the fermentation bucket directly, with a cork in place of the airlock to prevent air contamination. The following evening Safale US-05 yeast packet added to the brew with OG 1.067. Fermentation bucket placed in fermentation refrigerator, the temp fluctuating from 13-15°C for the first few days. Then, with the fridge failing, the brew sat for 30 or so hours at approx 25°C and then dropped back down to 14-18°C, rarely rising above that temperature. Checked 13 days into brew: SG 1.019. Checked 15 days into brew: FG 1.019 = 6.3% ABV. Bottled 19 days into brew into Iodophor solution-sanitised 330ml and 500ml bottles primed with 185 grams demerara sugar.

Yield: 20.67L (56 x 330ml, 4 x 500ml bottles)

IPAeus II

IPAeus II – an India pale ale.

Brewed February 11, 2018. Bottled March 15, 2018.

6.4% ABV  (OG 1.074 / FG 1.025)

Recipe:

  • 7 kilo Pale Ale malt
  • 400 grams Munich 60L
  • 400 grams CaraPils
  • 400 grams Flaked Barley
  • 100 grams De-Husked Roasted Barley
  • 30 grams Bravo hops
  • 60 grams Cascade hops
  • 10 grams Hallertau Mittelfruh hops
  • 11 grams Safale US-05 ale yeast
  • 200 grams dextrose

Brew Notes:
Equipment cleaned with bleach solution and sanitised with Iodophor solution. 26L water heated up for the mash, with the grain bag added at 70°C for 60 minutes. Wort drained, mash sparged with 5L tap water and then put up to boil. Bravo hops added 20 minutes after boilpoint for 40 minutes, forgetting to convert time for the use of the no-chill method. 10 minutes after the end of the boil, the Cascade and Hallertau Mittelfruh hops were added to the pot. The brew was then decanted into the fermentation bucket directly, with the airlock in place. Shortly thereafter the airlock was rigged to prevent air being sucked into the bucket. The following evening Safale US-05 yeast packet added with OG 1.074. Checked 14 days into brew: SG 1.026. Checked 25 days into brew: SG 1.025. Checked 32 days into brew: FG 1.025 = 6.43% ABV. Bottled into Iodophor solution-sanitised 330ml and 500ml bottles primed with 200 grams dextrose.

Yield: 20.8L (57 x 330ml, 4 x 500ml bottles)

IPAeus I

IPAeus I

IPAeus I – an American IPA.

Brewed January 11, 2017. Bottled January 25, 2017.

4.5% ABV  (OG 1.046 / FG 1.012)

Recipe:

  • 6 kilo Pale Ale malt
  • 1 kilo assorted specialty malts (including CaraRed, CaraPils, Melanoidin malt, etc)
  • 30 grams Mosaic hops
  • 30 grams Mt Hood hops
  • 11 grams Safale US-05 ale yeast
  • 170 grams dextrose

Brew Notes:
Cleaned from last batch with bleach solution. Sanitised with Iodophor solution. Water: 10L boiled tap and additional ~4L boiled tap to compensate for grain absorption + 2L boiled tap to wort + 8kg/8L ice and 1L boiled tap for cold crash and to reach 20L. 7kg grain bag added to mash tun bucket at 68°C for just over an hour. Temp fluctuations: dropping to 62°C, warm water added to 65°C, dropping to 59°C, grain bag removed and wort heated up in pot to 75°C, re-added to grain bag + dripping wort to reach an overall temp of 66°C upon culmination. Wort transferred to boil pot to start brewing (10L wort + 2L boiled water). 20g Mosaic and 10g Mt Hood hops added at boilpoint for 60 minutes. 20g Mt Hood and 10g Mosaic hops added for 10 minutes. 11L of wort cold-crashed with 8L ice to 16°C and mixed with 1L boiled water to raise temp to 22°C. Safale US-05 ale yeast pack added at 22°C. OG 1.046 at 22°C. Checked 12 days into brew: SG 1.012. Checked 14 days into brew: FG 1.012 at 17°C = 4.5% ABV. Bottled into Iodophor solution sanitised 500ml bottles primed with 170 grams dextrose.
