IPAeus IV

IPAeus IV – a special edition “Wedding IPA”.

Brewed January 6, 2020. Bottled January 22, 2020.

5.8% ABV (OG 1.064 / FG 1.020)

Recipe:

3 kilo Pilsner extract
1.5 kilo Pale Ale extract
500g Torrified Wheat
250g Caramel Light 10 malt
250g Victory malt
45 grams Cascade hops (bittering)
70 grams Cascade hops (aroma)
11 grams Safale US-05 ale yeast
200 grams cane sugar

Brew Notes:
Equipment cleaned with bleach solution and sanitised with Iodophor solution. An approximate 10-15L filtered water heated up for the mash, with the steeping grain bag added at 68°C for 45 minutes. Heat dropped down to 52°C and brought back up to 68°C throughout the process. Wort removed and the mash sparged with tons of filtered water until approx 28L wort was put up to slow boil. 45g Cascade hops added 25 minutes after boilpoint for 20 minutes, factoring time conversion for the use of the no-chill method. At flameout 70g of Cascade hops were added to the pot in a whirlpool. The approx 24L of wort was then decanted into the fermentation bucket directly, with extra filtered water added until volume reached 25L with a sealed airlock to prevent air contamination during cooling. Bucket was placed in refridgerator to cool more rapidly, and removed for the fermentation. The following day Safale US-05 yeast packet was added to the brew with OG 1.064 at 17°C. Temp fluctuating from 13-16°C throughout the fermentation. Checked 10 days into brew: SG 1.020. Checked 15 days into brew: FG 1.020 = 5.78% ABV. Bottled that day into Iodophor solution-sanitised 330ml bottles primed with 200 grams white cane sugar.

Yield: 19.47L (59 x 330ml bottles)
